Assuming you are taking about the lead horse in a herd, if it's a female it is called a lead mare or boss mare, if it is a male it is called the stallion since there is only one mature stallion (fertile male horse) in a herd of horses.
Mature. In some breed shows the 5th birthday bumps the horse up into the regular classes. Up until 5 you can show your horse in training bits and you can keep them in the classes with other young horses. That way they compete with horses their approximate age and skill level. After the 5th year you ride against older horses that have more experience and training. It just evens things a bit for young horses. Sometimes their may not be ready for a regulation bit until their 5.
