What group is gravy in?

Although gravy can contain bits of or broth from chicken, turkey, beef, or other meat, leading to thinking that gravy belongs solely in the meat/protein food group, it likely belongs more in the bread/starch/carbohydrate group due to flour that is used to thicken the broth to make gravy. Some 'foods' that we eat do not belong to any specific category. For example: jello, candy and gravy do not belong to any one category. The gravy my family fixes includes flour, milk and oil. So, that's part of three different food categories. Grain, dairy and fats/oil.

How many liquid ounces in 4 liquid pounds of gravy?

4 lbs of water is approx 61.3 fluid ounces, adding flour would increase density, thereby decreasing the volume from 61.3 fluid ounces. Oil in the gravy would decrease the density, thereby increasing the volume from 61.3 fluid ounces. The answer would depend on the percentage of flour and oil in the gravy, ballpark figure 4 lbs of gravy would be approx 60 fluid ounces

How do you make roux?

To make roux you need equal parts oil (a fat) and flour (all purpose is best). Heat oil in a skillet (frying pan) when oil is warm, close to hot frying stage but not overheated, slowly mix the flour. Continue cooking the oil and flour mixture over medium heat stirring constantly. Cooking times vary, depending on the type of gravy or sauce you desire. 2-3 minutes will produce a very light colored roux, recommended for a milk based gravy/sauce. The longer you cook the roux the darker it will become. Be careful, not only does the oil/flour mixture become very HOT it can burn very easily, constant stirring is a MUST. Add to your boiling liquid to thicken your sauce or gravy. Roux can be kept for about a week in an airtight container in your refrigerator.

How do you separate lumps from gravy?

The best way is to never get lumps in your gravy in the first place. You do that by holding out the liquid/juices, warming the flour and oil together in a pan until the flour is totally liquefied and bubbling in the oil, and THEN adding the juices. This method will cut down dramatically, if not entirely eliminate, all lumps. If you do get lumps, run your lumpy gravy through a fine strainer, collecting the lumps together. Then, dip into the gravy, and keep pouring it through the strainer, at the same time crushing the lumps with a spoon. Do that a couple of times and all the lumps will be dissolved into the gravy. Only the toughest parts of the lumps will remain in the strainer.

What kind of oil mixes with flour?

What does a golden ratio have to do with culinary arts?

The golden ratio is a mathematical concept. However, many great cooks memorize standard ratios in cooking, such as the ratio of oil to vinegar for vinaigrette, or the ratios of flour to liquid to eggs for baked goods.

Can you make a roux in a crock pot?

No, you can not make roux in a crock pot. Roux is not a gravy, a sauce, or anything else of the sort. Roux is the base of many sauces & gravies not only in French cooking but Cajun cooking as well. You can make a roux gravy or a roux sauce, the roux itself can not be made in a crock pot. I have to add, the best flavored roux is made with butter. The amounts are the same, however, melt the butter before measuring. For example if 1 cup flour & 1 cup "melted" butter. Also stir the flour into the butter or oil (whichever you are using) as it heats, if you allow the fat to get too hot before adding the flour, the flour will actually fry and develop lumps. Add the flour slowly stirring constantly to ensure proper mixture. The flour will make the fat thick and heat up along with the fat and begin to darken.
