Well, I heard since they already know what the updates are going to be, and what they do on the computer version, it might not take a long time to transfer the software to the Xbox's console. So maybe a few months or weeks! Try to enjoy the first minecraft update and just be patient!
Some time within the next week, (In September 2012) Minecraft will be updated, most likely it will include hunger(As shown in screenshots of the update), and will fix several glitches including "duping" materials.
They are also updating the xbox with silent updates.

Currently, the Xbox 360 version of Minecraft is running 1.6.6 beta. This update came out before the adventure update of 1.8. It will take a while for the Xbox 360 version of Minecraft to catch up to the PC version of the game.
Minecraft for xbox360 is still in Alpha mode, but i think mojang is waiting for next minecraft update for xbox to be updated. not sure though
