They should be changed only if they are cracked. That is why it is important to never let it run hot.
They are located in the engine block and in the heads.
There is only one way to fix it. Remove the heads and replace the gaskets.

change nothing!!! that's the beauty of the small block Chevrolet motor. look for proper accessory bolt holes on heads.

The 327 Chevy used those heads. Also for a detailed list of original applications take the numbers off from the heads and check them in "CHEVROLET BY THE NUMBERS" manual written by Alan L. Colvin. This will tell you exactly the year , model, dates when those heads were used.
First off is that you replace them both and not just one. The intake, and exhaust manifolds must be removed. The heads then need to be removed and checked by a machine shop for warping and cracks. This is a major repair that should only be attempted by someone with the tools and skills to do it correctly. If you have the tools and skill, I suggest you purchase a repair manual for the specs and detailed instructions.
I replace the heads with first starting by draining the coolant then removing the exhaust as neccasary then the intake manifold and distributor then the valve rocker arms and pushrods then unbolting the heads.
