Press the Delete key to remove a character on the right of the cursor.

If the text begins with an Alphabetic character simply place the cursor in the cell and start typing. If the text begins with a numeric character place the cursor in the cell, type an apostraphe, then begin entering the number and text. i dont get it
The space bar disappears when a space would be an illegal character. Probably in Safari you were typing in the URL box (perhaps you didn't realize that is where you cursor was) and a space is not a valid URL character. If you had been in the Safari search box it would be a legal character. So be aware of where you cursor is the next time this happens and I'm sure the ipad is trying to protect you from typing an illegal URL.
Backspace deletes the characters to the left of the cursor while delete deletes the characters to the right. (The cursor is the vertical line that flashes on and off where you are typing text)

In Windows make sure you have mouse setting "hide cursor while typing" off. If you have this setting on, Windows will hide the cursor whenever you are typing text with your keyboard. You could also try to change to default mouse pointers.
