Mount Everest first attracted interest in 1847 when it was suspected of being the world's highest mountain. This was confirmed in 1849. Prior to this it had probably been known to the natives but did not attract particular attention. It was first successfully climbed (not discovered) in 1953.
The history of that is complicated as it was obviously discovered by Nepalese and Tibetans many years before Europeans were on the scene. It was officially surveyed from a great distance in and around 1850 during the Great Trigonometric Survey of India. Its local Tibetan name is Chomolungma but the British were unaware of this since Tibet was closed to outsiders. Its British name was given in honour of a Surveyor General of India, Sir George Everest.
People from the Kirata group inhabited Nepal over 2500 years ago. It is a Sanskrit term for people who live in the mountains. Erosion has exposed prehistoric settlements and artifacts from the Early Paleolithic period to the Neolithic. In 1997 a hand axe was found that could be more than 730,000 years old. It is likely that some unknown prehistoric travelers long, long ago "discovered " Sagarmatha (Nepali). It was given the official name of Mount Everest in 1865 by an English surveyor, of course.
