The first pasteurization test was completed by Louis Pasteur (whom its named after) and Claude Bernard on April 20, 1862. It was discovered prior to that but Pasteur had not performed an experiment.

The process was to heat a liquid (normally milk) to a high temperature, roughly 71C, and then drastically cool it for at least 15 secs. This kills off most of the bacteria.

The amount of time that the liquid is heated and cooled, and to what temperature, is dependent on the liquid being pasteurized. This means the bad bacteria and harmful fungi can be more efficiently stunted in growth.
