Officially the Church was born on the day of Pentecost when God poured out his Holy Spirit on the entire body of believers at once. But that was still during the transitional period between the passing of the Old Covenant (Old Testament), which was begun w/the birth of Messiah (Jesus), to the ushering in of the New Covenant, which actually took place at the destruction of the Jewish (Herod's) Temple by the Romans in 70 C.E., thus eliminating the place of (and any possibility of) any further Jewish sacrifice for sin. Although Pentecost was the "official birth" of the Christian church, it actually came into it's own after the destruction of the temple.
There is no indication given in scripture as to when he first organised church started. One has to assume that from the beginning Adam taught his family all that God had taught him. This was most likely done in family groups. If you are referring to buildings where the saints could meet one can only hazard a guess as to when this was done. That buildings were eventually build so that the saints could meet together and be edified eventually had to take place. But this writer does not rule out the idea that such places did not exist in Adams day.

766 The Church is born primarily of Christ's total self-giving for our salvation, anticipated in the institution of the Eucharist and fulfilled on the cross. "The origin and growth of the church are symbolized by the blood and water which flowed from the open side of Christ as he slept the sleep of death upon the cross that there came forth the 'wondrous sacrament of the whole Church.'"
