This would cause obvious problems such as pneumonia and drowning of the lungs as well as no nourishment for the body and brain as no food would be entering the stomach. The epiglottis serves as a little trap; keeping food, liquids and air from entering places inside the body where they should not be, as well as helping to guide these same things to where they DO belong.
