If you are talking about in the movies, they weren't put in. Like many other things, such as all the ghosts, creatures, and Peeves, they require computer animation.
However, there are more important things in the films that acquire attention over the statues, so they aren't put in.
There's a chance that they will appear in the 7th movie but I'm not sure about that yet.

In the Order of the Phoenix game, there are gargoyles at the entrance of the Entrance Bridge, in the Transfiguration Courtyard, on the outside deck next to the Hospital Wing, in the Stone Courtyard upper level and half way up the stairs to the Divination Tower
one is in the stone courtayrd where you find colin creevey, one is in on the part in the stairs that go up to the DADA classroom the turnoff the takes you back down the second floor, one is on the fourth floor there is a door to the right or left i cant remember go through the door and follow the path, one is on the stone bridge near the stone courtyard and the last in the transfiguration courtyard.
