Hubert Keller's apple meringue pie used a standard 9-inch pie crust. Quarter 4 Granny Smith apples and score 8-10 times across the back. Place apples in pie shell and bake 15-18 minutes at 375 degrees, until apples are soft. In a mixing bowl, combine 7 TBS sugar, 1 TBS cornstarch, 2 eggs, 1 tsp vanilla, 1 cup half and half, and 2 TBS Calvados apple brandy. Blend well and pour over apples in the pie shell. Return to oven and bake 20-25 minutes. Fill medium saucepan half full of water and bring to simmer. In stainless stell bowl, 1/2 cup egg whites and 1 1/3 cup sugar. Place bowl over simmering water and whisk for 3 minutes, until are thick and foamy. Add 1/2 cup peeled and sliced almonds. Whisk for an additional 3 minutes. Pour meringue over pie, sealing sides. Return to the oven for an additional 8-10 minutes. Remove from oven and dust with powdered sugar. Serve pie while warm.
