Salt is used to preserve meat. It's usually part of the curing process. If you want unsalted pork, look for uncured pork products or buy fresh cuts of pork in your grocer's meat section (like fresh pork loin). Also, I just saw unsalted pork rinds at simplycajun.com... very rare indeed!
