There are several relevant books that contain Jewish commentaries, stories, and folklore. Probably the most important and famous of these is the multi-volume Talmud; but there are others including, but not limited to: the Mishnah, the Midrash, Rashi's commentaries on the Torah, and (more recently) the Tales of the Baal Shem Tov, etc.
Don't confuse mythology with religion. Religion is the set of rites and practices and core beliefs. Mythology is the collected stories and folklore associated with a belief system. My religion can't become mythology, but the folklore and literature (i.e. the Bible) associated with it can. It could be argued that stories like that of Adam and Eve, or Noah and the Flood, are Judeo-Christian mythology.
The opposite of folklore could be considered to be "fact" or "history" - information that is based on verified evidence and widely accepted as true.
A haunted boy could refer to a male child who is believed to be possessed by spirits or ghosts, experiencing paranormal activity or being tormented by supernatural forces. It is a common theme in horror stories and folklore.

You could, if there was a degree in folklore. In the colleges/universities I know there are no majors in folklore but English lit. What job would you want to have after you do this, if you could ? The reason for college is to get a degree and a profession to earn a living from the degree. A job with these degrees would be very slim in job openings.
I could not find Tobith, however Tobit (a man) is included as one of the stories in the Apocryphal writings, which were never part of the Jewish canon of inspired Scriptures.

Technically, there isn't one. But if you're looking for another name for folktale, there's legend and fable.
A synonym for folktale could be folklore.
While this is more of an opinion I would say that folklore can be a very helpful insight in the understanding of certain cultures and peoples. So while it doesn't necessarily have to be a subject in itself you could use folklore as an aid in social studies.
