It's actually written as "s'more" because it is a contraction of the words "some more". The first recorded version of the recipe for a 'some more' is in a Girl Scout cookbook written in the 1920's. It is not known when the name got shortened.

The Girl Scouts. No one knows. The three primary ingredients (graham crackers, marshmallows and chocolate bars) were readily available to the American public by the late 19th century and very popular in the early 20th century.

I'm not sure what you mean by originate.

If you mean the name, I think that when they were originally made, people always used to want some more, which was then abreviated to s'mores.

If you mean who first made them, I'm not sure, but I think it was boy scouts.
