There are many breeds if domesticated canaries, bred for generations by fanciers to tweak and change the song or appearance in various ways to our liking. There is nothing 'wrong' with the wild canary just as there is nothing wrong with the original wild dog, horse, pig or cat. Humans, however, enjoy tinkering with our domesticated animals, and canaries, cats, horses, dogs, cattle etc have all been 'improved' (at least in our eyes) over the original wild types.

I think that it would be highly unlikely because of the fact that hybridization is very distant, and house sparrows and canarys can tell when they are getting a bit too friendly with one of another species.
