I assume it is a bone in roast - For bone in 20 minutes per pound should do it. Pork should reach an internal temp of 165 degrees Fahrenheit. CHECK the link I added.
Pork prepared in a Convection is best done by "Dry Roasting". First if the size allows you to, with the flat side on a cutting board. Cut the pork loin 3/4r's of the way through. Fold the button on top of the top, flat sides together and tie the pork loin halves together. Next in a hot pan with a small amount of olive oil in it. Sear the pork loin on all sides. Then transfer the pork loin to a 325 degree oven for 2.5 0- 3 hours for a 5-6# pork loin. roughly 30-40 minutes per pound or an internal temp of 170 degrees.

I am a chef and you need to cook it until the internal temp is 145 degrees or at oven temp 350 for 30-45 min. It also depands on how you are cooking it. Grill? Oven? Stove Top? Slow cooking?

OK, I'm assuming for the pulled pork, you used a pork shoulder. No for the porchetta, you say you're using a loin. Totally different cuts that you serve at different temps. Pork shoulder at 190-200 degrees and the loin in the 150-160 range. I'd would guess on low it's going to take in the 4-6 hour range. Loins tend to very lead--except on the outside. I'd check the temp after 4.

Pork chops should be baked for 45 minutes, in a convection oven, at a temperature of 325°. Pork chops should not be considered done until the internal temperature is a minimum of 165°.
You would use the cook time for the individual loin as it accounts for the size and thickness of the cut of meat. As long as you maintain the proper temp as recommended for your smoker the cooking time will be the same for multiple loins as it would be for a single loin.
i say cook@ 400 for ten minutes then turn down to 325 and cook until internal temp is 165 -170 degrees.
using a cooking thermometer ,plunge it the roast at the thickest part. 165 degrees is the temp for pork
