The temperature sending unit on the 1995 Escort is on top of the engine. It is mounted at the thermostat housing, where the top radiator hose comes in.

Your problem is not a fuse. There is not a fuse that controls that one gage. Check the temperature sending unit. 99% thermostat if you want to get a used sending unit from the wrecker
they are very hard to find....very very hard to find...the ones i found in salvage yards were all rusted and junk
The temperature gauge sending unit might be bad. To check it find the sending unit on the side of the engine block (on most models) and pull the wire off and ground it with a piece of wire and have someone look at the gauge to see if it moves.
You can find a wiring diagram for the rear window defogger in a 1995 Ford Escort LX Haynes repair manual. The book is available at most auto parts stores.
This is only going to answer 1/2 of your question but the oil pressure sending unit is on the drivers side of the engine , below the power steering pump

Right next to the oil filter, it kinda gets in your way when you are replacing the filter.
Since the lock is going to be different than other 1995 Ford Escorts, I would say the best place to get one is to contact your nearest key smith or contact the Ford company and find out how to get on fabricated.
