Bananas freeze very well. They can be frozen whole (peeled) and then used for smoothies, or blended in a food processor with walnuts and blueberries for an ice cream substitute. Another way to freeze bananas is to slice them into circles and spread them on wax paper on a baking sheet and put in the freezer. Once they are hard, pack the circles in freezer bags. They taste best while still mainly frozen. If you totally defrost them, they would get mushy.
Bananas can also be dried in a dehydrator.
