This is the reason why saving baby food that has been "double-dipped" with their spoon is discouraged- the saliva has begun the process and the food can spoil faster. If you know your baby generally does not eat a whole jar, spoon out the amount you anticipate they will eat into another container.
This is also why high starch foods raise our blood sugar so quickly: the saliva turns the starch into sugar while still in our mouth and is absorbed rapidly.
