It is ordered from the same large meat packing places that grocery stores and restaurants get it. Excel, Farmland, IBP, John Morrell, Nebraska Beef, National Beef,and Swift. It's then cut in house according to specs provided by Corporate. It's actually a lot fresher than pre packaged meats like Walmart and other grocery stores. It's the same as going to a butcher shop and getting meat. All the beef, pork, lamb, and fish gets a 4- day shelf life and is donated or thrown away on day 4 if it is not sold before then.
