The Eucharist as a sacrifice is called the Mass, most probably from the dismissal (''missa) of the catechumens before the celebration. The Mass is a true proper sacrifice, namely, "the external offering up of a sensible gift, which is destroyed or transformed by an authorized minister in recognition of God's supreme dominion." This is Catholic doctrine, proved from prophecies, from the sacrificial character of the Last Supper, and from the unvarying belief of the faithful. In the early church, the Catechuminate (those not yet baptized, but being taught the faith, stayed for the first part of Mass... the Readings and Sermon (Homily)... after which the deacon would cry out "The doors, the doors, be attentive the doors" (I've been told that this is still done in the Orthodox Liturgy) and those who were not baptized would be ushered out of the church "en Mass" as they were not allowed to witness the "mysteries" of the faith...

Those who may have been standing outside the "church" would witness the exodus "en Mass" and the name "Mass" came to be.

The origin of the Catholic Mass was Our Blessed Savior's death on the cross. The Holy Mass is the re-presentation of that sacrifice so that God makes it possible for each of us present at Mass to witness Christ's sacrifice on the cross, and to receive the graces from that, if we are in a state of grace.
