The question makes this sound like an "intentional rebellion" of animals against man... like some Hollywood sci-fi production or something. But The Bible speaks of no such thing.

However... there are prophecies regarding the time of Jesus' return, in which a great "blood-letting" will occur when Christ and His angelic armies will wipe out the armies of man gathered at "Armageddon" to fight Him. This "Battle of God Almighty" is described as resulting in massive bloodshed and bodies piling up high.

In this description... "carion-eating" animals are "told to gather" to feed on all the dead bodies [both man and animals]. This is not any kind of "intentional rebellion" of animals against mankind; but the natural gathering of these types of creatures that God has made that are merely a part of the "recycling process" He created in the world that's been going on since the beginning.

Armageddon or the "Valley of Hinnom" or "Megiddo" is where the returning Christ will destroy man's ability to make war... FOREVER... and smash the power of man's governments and rule over the earth... FOREVER, IN ONE DAY!

"'So beware, for the time is coming,' says the LORD, 'when that place will no longer be called Topheth or the Valley of the Son of Hinnom, but THE VALLEY OF SLAUGHTER. They will bury so many bodies in Topheth that there won't be room for all the graves. The corpses of My people WILL BE FOOD FOR THE VULTURES and WILD ANIMALS, and no one will be left to scare them away... The land will lie in complete desolation.'" (Jer.7:32-34 NLT New Living Translation)

Of course, Jeremiah gave his fellow Jews the warning from God regarding their impending captivity by Babylon, should they fail to repent of their national sins. This description, also, is merely the "natural result" of the Four Horsemen that have been "riding across planet earth" since man first sinned -- false religions, wars, famines, pestilences and diseases... and, of course... the resulting "recycling process" that God pre-programmed into certain animals:

"'I will send four kinds of destroyers against them,' says the LORD, 'I will send the sword to kill, the dogs to drag away, the vultures to devour, and the wild animals to finish up what is left... I will make My people an object of horror to all the kingdoms [governments] of the earth.'" (Jer.15:3 NLT)

But in the prophecies of Christ's return... this future "overwhelming, overturning of rulership on earth, and the smashing of the power of man's governments"... God tells us:

"...the Lord will send a plague on all the nations that fought against Jerusalem. Their people will become walking corpses, their flesh rotting away. Their eyes will shrivel in their sockets, and their tongues will decay in their mouths." (Zech.14:12 NLT)

And: "Then I saw an angel standing in the sun, shouting to the vultures flying high in the sky: 'Come! Gather together for THE GREAT BANQUET God has prepared. Come and eat the flesh of kings, captians, and strong warriors; of horses and their riders; and of all humanity, both free and slave, small and great.' Then I saw the Beast [some people today call him "the Antichrist"] gathering the kings of the earth and their armies in order to fight against the One sitting on the horse and His army... Their entire army was killed by the Sharp Sword that came out of the mouth of the One riding the white horse. And all the vultures of the sky gorged themselves on the dead bodies." (Rev.19:17-21 NLT)

There are more descriptions, of course... but none of them are about "animals turning against man." These animals are merely doing what they have always done in the aftermath of war... and man's sins.
