The Irish used to specialize in potatoes, but when they had the infamous Potato Famine, many thousands of Irish migrated to America. There is a commercial currently being shown for commercial potato chips that claims they use potatoes from California, Texas, Idaho, New England, Georgia, and I don't remember all the other places! My father used to grow them (a red all-purpose kind) in our backyard in Alabama.
Why are they grown all over? Probably because potatoes are really good food! They have good nutritional value, especially in the skins, and they are cheap to grow. They come in a wide variety of colors and sizes. My favorite potato taste is the Yukon Gold. "New" potatoes (in Alabama) are red all-purpose potatoes that are small (about 2" around) and fresh from the ground. Great simply boiled, with butter!
If you have any potatoes in your kitchen, you can pare them (that means cut the peelings off with a knife, without cutting deeply into the potato), cut the peelings into small squares with an "eye" on each square, and plant them in your own yard. The difference seems to be that the potato bits must be planted in wide-apart mounds. I don't know how far apart, how deep to plant, or how high to mound them. Those details can be obtained from your County Extension agent of the FHA, or some such place/people. When they are ready to harvest, they must be carefully dug up (don't cut into the potato flesh, if possible). My Dad found potatoes all spread across the planting area, in varying sizes from tiny to huge! Some are good for baking, some boiling, some for salad-making, or any way you want. Home-grown cannot be beaten.
