Typically adjacent to the oil filter flange, and on the end of the motor.
Under the back seat there are two access panels to the tank. The fuel pump/sender unit is under the O/S panel and the other sender unit is under the N/S. You can tell the difference as the fuel pump and sender combined unit will have two electrical connectors. The solitary sender only has one and a fuel return pipe i think.

To remove a fuel sender unit, first, ensure the vehicle is off and cool, then disconnect the negative battery terminal for safety. Access the sender unit by removing the rear seat or fuel tank cover, depending on your vehicle's design. Disconnect the electrical connector and any fuel lines, then unscrew the retaining ring or bolts holding the sender in place. Carefully lift the sender unit out of the tank, taking care not to damage the unit or the tank.
Unit is incorporated in the door latch and is not serviced. You'll have to replace the latch assy.. Where is the sender for the automatic doorlock?

Sounds like a wiring or sender unit problem. Ground wire at sender unit, see if it stays steady. If it still jumps around, wiring/gauge problem. If it stays steady, sender unit should be replaced. Good idea to do an oil pressure test as well.
