Remove the engine cover by undoing the 3 nuts. You will see the fuel temp sensor between the bulkhead and the fuel filter (there is a green clip holding it in place on my 2004 c5 model).

The air temp sensor measures the temp of the incoming air. cold air carries more oxygen while hot air carries less. so according to the temp from the temp sensor the cars computer can accurately adjust the the amount of fuel to be mixed with the air into the engine. Note: there are other sensors that the computer uses to get the right air/fuel mixture.
