The orifice tube is located on the inlet port or the primary evaporator on the passenger side of the firewall. It is nearly hidden behind/between the heater vertical hoses.
Year? Condition? Features? Mileage? Need to know these things in order to assess the value. You won't find a brand new one - the 379 was taken out of production after the 2007 model year.
Depends on temperature and relative humidity. I'd recommend you do a search for an 'R134a pressure/temperature chart'

The turn signal flasher relay switch, on a Peterbilt 379, is located under the dashboard. The relay simply plugs in.

I'm not sure if they are all the same but my 379 has the switch built into the air dump switch in the dash

If it has one, they're usually located near the SAE J1707 connector, bottom of the dash above the driver side footwell. If they don't have one, you'll have to get a laptop with the ABS program... having a mental blank here and can't think of the name of it right now, even though I was just using it yesterday.. with a NexIQ box.... the proprietary data boxes each manufacturer uses (e.g., Inline for Cummins) won't do ABS diagnostics.
