In a 93 jetta it is located in the water pump.Just 2 bolts holding it in. Be carfull not to strip them when unsrewing them from the alum. housing. If your car's overheating gague or light is on yet a thermometor in the radiator indicats 180 deg's.It is the temperature sensor not your thermostat.
Ok, if you follow the main coolant hose from the radiator to the engine block you will see that before the coolant actually enters the engine block it goes through a plastic housing with two electrical plugs this is where the thermostat is located. One of the two plugs controls the thermostat (if not both). I had a problem with my cooling system ('94 VW Jetta GL III 2.0L) as well and had to find it on my own. I replaced the whole housing for approximately $35 and it fixed my problem.

Just look for that main hose, and follow it to the cylinder head. follow the bottom radiater hose to where it enters the water pump, you will see a housing. in this housing, that is held on by two bolts is where you will find your thermostat. its easier to get to underneath the vehicle I would suggest taking this in for repair, you can buy the thermostat at any auto shop for under ten dollars. Finding a auto repair shop that will fix it is the hard part. I found a local mechanics shop that would do the job for eighty dollars, and i gladly paid him The thermostat is located under the power steering housing, making it a hard job, you will need two 13mm deep well sockets, a swivel, and an extention, and alot of patience. First release the bottom hose, let antifreeze drain, release three bolts to power steering housing, two in front, one in back, then will be the money shot, you will see the thermostat, from there it's simple removal and putting back together. good luck! If the car has power-steering the power steering pump and mounting bracket have to be removed to get to the thermostat housing.
IF IT IS THE 2.0 ZETEC 16 VALVE DUAL OVERHEAD CAM THE TEMPERATURE SENDING UNIT IS ON THE LOWER SIDE OF THE THERMOSTAT HOUSING. THE THERMOSTAT HOUSING HAS TWO SENSORS, THE ONE ON THE TOP IS THE COOLANT TEMP SENSOR THAT SIGNALS THE RADIATOR FAN, AND THE ONE ON THE BOTTOM IS THE TEMPERATURE SENDING UNIT THAT RUNS THE TEMP GAUGE. THE SENDING UNIT HAS A WIRE CLIP THAT MUST BE PULLED BEFORE YOU CAN PULL THE PLUG.

grab yourself a bentley manual and save yourself a lot of future headaches. they can be found for around $50. I had a 93 2.0 OBD1 at one time and believe the thermostat to be on the right side of the cylinder head (the side that mates with tranny). drain your coolant first, use channel lock pliers for the spring clip and pull the hose off. Then you can remove the housing which contains the thermostat. I might be wrong GL
