On the 2.7L the thermostat is on the same side as the battery about level with the battery platform. You'll notice a large hose running from the bottom of the radiator to the side of the block in that area. There is two 12mm nuts holding the hose to the water inlet housing. This is a rather quick change, approximately 10 minutes.
You should check your Toyota Tacoma's owners manual. There should be a diagram for the location of your thermostat.
