Where should the oven rack be placed for cooking cookies?

Cookies should be placed on the middle rack and, if possible, a second cookie sheet should be placed under the first one to help avoid burning the underside of the cookies. Alternatively you can buy cookie sheets that have a double layer bottom with an airspace between.

The middle rack is generally the safest option. However, there are slight differences to each rack. The oven heat does not stay on consistently throughout baking, but rather works in bursts of heat. Therefore, the heat is actually most consistent on the top rack of the oven. If you're trying to brown your pie crust, you may actually want it on the bottom rack so it gets more direct heat. You can always move from rack to rack as well - starting out on the bottom to brown your crust, then moving it up higher, or vice versa. There's no real set rule to it - don't be afraid to experiment (if it isn't your only shot at impressing your diners, that is).
