What type of potato? If they are not seed potatoes you will get none. Different varieties produce varying amounts but you will get several on each plant.
Grocery store potatoes are sprayed with a root inhibitor. This increases their shelf life and not suitable for replanting. If you can get organic potatoes from the store they will work.
