Asparagus, rhubarb, horseradish, artichokes (depending on zone), most berries (but they are fruits), all are perenial plants. Of course, this depends on in which zone you garden is located. Some plants that can produce "volunteers" would be pumpkins, tomatos, watermelons (and other melons, for that matter). That is all I have experience with. Perhaps a better question to research would be: "What vegetables are perrenials?" A perrenial is a plant that "survives the winter" and comes back every year. An annual will need planted every year because it will not survive the winter cold. Best of luck and happy gardening!
