When you discount the Jews, you are discounting the overwhelming cultural diversity that the Jews brought to Israel as a collective. (It would be like saying "Aside from the Whites, what racial group mostly influenced the culture of the USA?). However, the answer is that the Palestinian Arabs were the ethnic group that influenced the culture of Israel most strongly.

If I was a palestinian I would want the entire world to be a Palestinian state. If was an Arabian I would want the entire world to be slaves of the Arabian people. If I was a Jew I would want the land of Israel to be a homeland for the people who believe in the Jewish faith so there would be at least one place on earth where wearing a Jewish round hat to be normal and not weird. I think Palestinans are lucky to have Jordan, and if they were good people they would stop sending missles into Israel and be good neighbors.
Since Israel's modern inception in 1948, there have been a number of declared wars between Israel and surrounding countries, including at various times, Egypt, Jordan, Lebanon, Syria, and Saudi Arabia. There has never been a war between Palestine and Israel. The area now known as Israel was part of the area known as Palestine before 1948. Since 1948, there is no Palestinian army, navy, air force, marines, SEALs, National Guard, or other regular military organization. There is also no Palestinian language, currency, or capital city, and no Palestinian country. The Palestinian people are a loose agglomeration of mostly Arab, mostly Muslim, people without a country, kept suppressed, without economic, political, or social rights, in "refugee camps", for over 60 years, for the political purposes of their ethnic and religious 'brothers' in the countries that border Israel. These people don't have the resources to conduct war against Israel, but the countries that keep them oppressed have, and have fought at least three major wars with Israel since 1948. However, despite not having an army, Palestinians have directly engaged both Israeli civilians and soldiers in the Lebanese Civil War 1980-1982, both Intifadas (1987-1993, 2000-2005), and Operation Cast Lead (although admittedly that battle was terribly one-sided).
They are mostly Arab, Muslim, and they are allegedly a republic although it seems as if they have Presidents for life. They politically dominate Lebanon and have an ongoing conflict with Israel over the Golan Heights.
There are isolated skirmishes between Religious Zionists and the Israeli Army. These come as a result of the Religious Zionists belief that Jews are promised all of the territory of the Land of Israel by God and therefore Palestinians are not entitled to any of it whereas the Israeli government has made concessions to the Palestinian Authority for peace. However, most of the confrontations are not between Israelis and Jews, but between Israelis (who are themselves mostly Jewish) and Palestinians. Israel possesses the holy land of Palestine, which is where the basis of the country is situated. In addition, Israel occupies the land of the State of Palestine, a neighbor who has been conflicting with Israel since Israel's formation in 1948. The British Mandate of Palestine mostly became the Jewish State of Israel after World War II on account of the passage of UN Resolution 181, helped in no small measure by the sympathy for the Jews garnered because of the Holocaust. This was done so because Palestine is very holy to the Jews, among Christians and Muslims as well, and is described as the God given land to the Jews in the Torah.
Samaritans believe that God sanctified Mount Gerizim (outside modern Nablus) as the holy site for sacrifices, and about half of today's Samaritan community lives in a village on the slopes of Mount Gerizim in the Palestinian territories. The remainder mostly live in suburban Tel Aviv. There are fewer than 1000, and both the Palestinian Authority and Israel are willing to grant passports to the Samaritans, and allow them freedom to travel across the Green line.
