Simeon was a disciple, not an apostle. The apostles were specifically chosen by Jesus as his closest followers and given the authority to preach the gospel. Disciples, on the other hand, were more general followers of Jesus.

The Bible account of the miraculous feeding of over 5,000 is found at Matthew 14:14-21. "When he came ashore, he saw a large crowd, and he felt pity for them, and he cured their sick ones. But when evening fell, his disciples came to him and said: 'The place is isolated and the hour is already late; send the crowds away, so that they may go into the villages and buy themselves food.' However, Jesus said to them: 'They do not have to leave; you give them something to eat.' They (disciples) said to him: 'We have nothing here except five loaves and two fish.' He said: 'Bring them here to me.' And he instructed the crowds to recline on the grass. Then he (Jesus) took the five loaves and two fish, and looked up to the heaven, he said a blessing and after breaking the loaves, he gave them to the disciples, and the disciples gave them to the crowds. So they all ate and were satisfied, and they took up the leftover fragments, 12 baskets full. Now those eating were about 5,000 men, as well as women and young children."

John 19:26, 27 - When Jesus therefore saw His mother, and the disciple whom He loved standing by, He said to His mother, "Woman, behold your son!" Then He said to the disciple, "Behold your mother!" And from that hour that disciple took her to his own home. [NKJV]
The Apostle John When Jesus therefore saw His mother, and the disciple whom He loved standing by, He said to His mother, "Woman, behold your son!" Then He said to the disciple, "Behold your mother!" And from that hour that disciple took her to his own home. (NKJV) John refers to himself as the "disciple Jesus loved" several times in his gospel in order to keep the readers' focus on Jesus, and not call attention to himself.
