This merely depends on what color the ink is. Black ink is a mixture of at least 4 different colors.
pen ink, marker ink, food coloring, dyes, felt pens, and colored pigments in plants
Because the dyes in ink are sparingly soluble in water, as they are organic dues. The solvent used in ink is Acetone (Propanone). to make them 'Combine' you would need to use an acetone solvent. However, due to its toxicity and combustibility i don't recommend it.
Scientists use chromatography for separating mixtures and other things like ink. The colors of a green leaf can also be removed using chromatography. They use it in laboratories to figure out what is soluble or what can be separated.
Black is a combination of all colors.
Dyes of different colors in black ink can be separated using chromatographic techniques.

Colors and dyes come from roots, berries, bark, or plant leaves, and are widely used in different applications such as ink for pens and to manufacture paints.

It wasn't ink that was used on the tapestry, but dyes. The strands of wool/linen were dyed with various natural sources. For instance to get the color of purple in this time clam shells were boiled and then the wool was added. Flowers, plants, and minerals were used to make the different colors. There were no man made dyes or inks when the tapestry was made.
Inks are generally mixtures.

It is entirely dependent upon solubility. First, the individual dyes that make up the ink's final color must be soluble. Then, the dyes that are more soluble are able to stay dissolved in the water longer than those that are less soluble, therefore getting further up the paper.
