I will explain this using the example NaCl, which is just common salt. When water is added to NaCl it dissolves until the solution is saturated. That is, where no more salt can be held in the current volume of water. The H+ and OH- ions present in the water (H2O) bombard the ionic lattice structure of NaCl where each Na+ ion is electrostatically attracted to Cl- ions. The bombarding ions are the H+ ions just to clarify. This ruins the electro static attraction between the Na+ and the Cl- ions.
