I have had success at ripening strawberries by leaving a stem on the strawberry and positioning the strawberry in a bowl with the stem only into water. The bowl which I use has a tray in the the bottom with slots in it bottom. It is used for holding fruit off the bottom of the bowl. I put water in the dish below the tray and set the strawberries with the stems in the water and the fruit on the tray. I leave the strawberries at room temperature until they are ripen and then refrigerate them.
