The electricity is sent to a grid. Sometimes the electricity is used as it is produced. If a hydroelectric dam is nearby, the electricity can be used to back pump water and then hydroelectric energy is available when it is needed. That way wind energy is stored.
Energy has to be converted to a different form when it cannot be used in its original form. Wind, as well as dam and tidal waters have to spin generators and thus their original form gets changed -- to provide us with electricity.

when the water is flowing over the the dam with high velocity, it acquires great kinetic energy, when this water is used to turn the turbines, this kinetic energy will be converted into electrical energy. so, when the water flows over the dam, hydroelectricity is produced.
Water from the dam makes turbine spin, these turbines spin generators that generate the electricity. The water is pulled down by gravity. The reason to build a dam is to have a large and constant supply of water for this process. This is called Hydroelectric power. Hydro means water.
