I can only offer my perspective as someone who deals intimately with rental cars, so my opinion should be considered just that -- a personal opinion that does not reflect the views of my employer or anyone else.
Dodge Grand Caravan / Chrysler Town & Country: These are basically the same car, although the Chrysler may have a more luxurious interior and more bells and whistles.
The Dodge/Chrysler is a very comfortable minivan. Possibly the nicest inside in terms of overall experience. One thing I have noticed about these is that they are well designed when it comes to how the seats move, fold, and stow. Access to the third row is very good and fairly intuitive. Second and third rows stow flat in compartments in the floor so you can use the whole area for flat cargo. It doesn't require removing the seats.
However, I find the quality of Dodge/Chrysler minivans to be questionable at best. They have lots of issues with fit and finish out of the factory, even brand new. Small flaws in the trim and seals are common. Interior trim around the second row seats is fairly flimsy and it is not unusual for me to find these pieces damaged or missing. Interior surfaces such as the dash, door panels, and console are easily scratched and difficult to clean.
Long-term reliability for Dodge/Chrysler is inferior to other brands, and this is a large part of why they are less expensive cars; they use inferior quality parts and the quality control is not as good.
Most trim levels have a pedestal console between the two front seats that is removable, which makes cleaning simple. But the higher trim levels may have a fixed console, and the gaps on the sides are basically impossible to reach into with a vacuum. The front row cupholders have removable rubber liners, which makes cleaning them a cinch. Third row cupholders are just molded into the panels, and do not have liners, so consider putting a liner of some kind in them if you have kids in the back row.
Volkswagen Routan: This is just a rebadged Dodge Grand Caravan.
Toyota Sienna: I personally have a lot of trouble getting comfortable in the driver's seat of this minivan, so make sure you can do so if you consider buying one. The ratio of seat height, pedal distance, and steering wheel alignment is somewhat odd.
The Toyota is a higher quality car than the Dodge/Chrysler in nearly every respect. However, the design of how the interior seats move and fold is not as easy to use, and access to the third row is somewhat more difficult. Second row seats do not stow into the floor, and must be removed from the car if you wish to use the floor as flat cargo space. Third row seats stow flat into the rear floor and do not need to be removed.
Kia Sedona: One thing I have noticed about Kias in general is that they are more powerful on the throttle than you expect. A Kia minivan with no one but the driver in it is like a big rocket with an unusual amount of torque.
Second row seats do not stow into the floor, and must be removed to have flat cargo space. These seats are fairly heavy, around 50-60 lbs.
As with most Kias, interior materials are of lesser quality, but are reasonable for the price of the car. Kia is also pretty good at making inferior materials look better than they are, with clever use of textures. They still scratch and damage easily, but I think they look better than the Dodge/Chrysler materials.
Mazda 5: I'm not entirely sure if this qualifies as a minivan or not. It's small, but it does seat 7 people and the side doors slide open the way minivans' do. It is a competent car for the price, although in general I find the quality of the interior upholstery in Mazdas to be inferior. I do not encounter this car often in our fleet so I do not have a more detailed opinion.
Nissan Quest: I do not encounter this car very often so I do not have an opinion about the design. But Nissan quality in general is high, and reliability would be good with this car.
Honda Odyssey: I do not encounter this car in our fleet since we do not seem to have any in my rental company's region, so I know almost nothing about its features. But a close friend of mine has one and it appears to be a high quality car. That would be expected with a Honda.
