The best oil you can use in your vehicle is the oil that is recommended by the manufacturer. Use that weight oil and no other way. The brand of oil you use is your choice. Just pick a name brand oil as they are all excellent lubricants.
There is no better. Each oil is designed for a specific application. Use exactly what is recommended by the manufacture.

Yes you can use 5W20 oil instead of 5W30. One is just thicker then the other. The 5W20 is better in the winter and the 5W30 is better in the summer.
REDLINE 5W-30 (NONE BETTER)
10W30 if you get winter. If you dont get winter then 10W40.
Use motorcycle specific 20W-50 engine oil. In colder climates, especially for winter riding, 10W-40 may be a better choice.

Pontiac oil pressure can be tricky! Check with your mechanic first but from my experience with my Pontiac use 10w-40 oil in the winter and 20w-50 in the summer. That has produced better pressure in mine.
Oils liquefy or solidify at different temperatures. Sunflower oil is lighter than coconut oil so it remains a liquid at a lower themperature in winter.
The w refers to oil weight, or viscosity, the higher the number the thicker the oil. 10W 30 and 5W30 are formulated to change viscosity depending on temperature, with lower number being thinner for winter driving. Generally, 5W30 is better for winter and 10W30 better for summer, or 10 W 40 even better for summer. Check the car manual to be sure for specific type of vehicle.
