The janitor/custodian of a cell is the lysosomes. The lysosomes break down food, old cells, and broken cells. The janitor/custodian cleans up the wastes/place and takes the wastes somewhere where it will get broken down.

Lysosomes: Lysosomes are small organelles filled with enzymes. The functions of the lysosomes are: 1) breakdown or digest the macromolecules, such as carbohydrates and proteins, to make them available for the rest of the cell, and 2) breakdown organelles which are old and not effective any more.
