Although most text books and reference books state that the dissolution of the monasteries (ie. abbeys, priories, friaries, etc.) happened between 1536 and 1539, a number of monasteries survived into 1540.
These include (with date of dissolution in brackets): Egglestone Abbey (5 January 1540); Shap Abbey (12-14 January 1540); Westminster Abbey (16 January 1540); Worcester Priory (18 January 1540); Shewsbury Priory (24 January 1540); Wenlock Priory (26 January 1540); Bolton Priory (29 January 1540); Ampleforth Abbey (29 January 1540); Gloucester Abbey (January 1540); Thetford Priory (16 February 1540); Waltham Abbey (23 March 1540); Gisborough Priory (8 April 1540).
Therefore, the last abbey to be closed under Henry VIII was Waltham Abbey, and the last religious house to be closed (although there may be an obscure one I have missed!) was probably Gisborough Priory.
One abbey, St Benet's Abbey in Norfolk, survived dissolution altogether, as the abbot had been appointed Bishop of Norwich, so the abbey was transferred to the see of Norwich (though most of it was still demolished).

King Henry VIII was not buried in Westminster Abbey. He was buried in St. George's at Windsor Castle because this is what he asked to be done with his body after his death.
