Who brews tequila?

Tequila is not brewed, it is distilled. Distillation of Tequila takes places at many distilleries which produce a vast number of different tequila brands. By law however, to be considered and called Tequila, it must be produced within Mexico, primarily the region of Jalisco. Tequila is produced from a member of the lilly family called the Blue Agave. The heart (or Pina) of the Agave is harvested, cooked and crushed to remove its juices. These are then fermented and distilled to produce Tequila. Mixto tequilas are then diluted with cane spirits to increase volume and reduce price while 100% Agave tequilas are bottled without additives. Blanco/White/Silver tequila is bottled un-aged while Reposado and Anejo Tequilas are aged in oak casks for a minimum of 6 and 12 months respectively.
