In Western Europe, books were copied mostly by members of monastic communities during the dark ages, as far as we know.
Our records of the Dark Ages are very incomplete, which is why the ages were called dark. Some ancient Roman institutions survived in this time, and there may have been a number of commercial scribes. There is no record of them, as far as I know, but there were records kept of secular events, and we do not know who most of the scribes responsible for this were. Some actions of the Roman Senate, for example, continued to be recorded until at least 603, and this may have been done by secular scribes. And we know of Dark Age authors who were most probably not clergy. It is hard to imagine that Beowulf was written by a monk.

The book they copied most was the Bible, but they did other works as well, and most surviving medieval literature was copied by monks at one time or another.
The Renaissance was not labeled the "dark ages". Renaissance means "rebrith" and it came AFTER the "dark ages or the middle ages."

Books were copied by scribes. Most scribes were monks or nuns. There were also commercial scribes, such as the ones employed by Christine de Pizan to copy the books she sold.

No one could read nor write so there were no books. The only books produced were by monks and they were handwritten about the bible or copied from ancient texts. The Book of Kells is a good example of what the monks did.
