French chemist Louis Pasteur was the first known zymologist, when in 1856 he connected yeast to fermentation. Pasteur originally defined fermentation as "respiration without air". Pasteur performed careful research and concluded "I am of the opinion that alcoholic fermentation never occurs without simultaneous organization, development and multiplication of cells.... If asked, in what consists the chemical act whereby the sugar is decomposed ... I am completely ignorant of it."

Probably pretty much by accident. Primative man stored fruits and grains in containers made of animal skins and pots. Wild yeast infected the beverages and converted the sugars to alcohol. Over time they learned how to control the process and the most effective ways of allowing the process to run, but it took many centuries to realize that there was yeast involved.

not sure about fermentation altogether but fermentation in bacteria was discovered by a French microbiologist called Louis Pasteur
