Probably pretty much by accident. Primative man stored fruits and grains in containers made of animal skins and pots. Wild yeast infected the beverages and converted the sugars to alcohol. Over time they learned how to control the process and the most effective ways of allowing the process to run, but it took many centuries to realize that there was yeast involved.
not sure about fermentation altogether but fermentation in bacteria was discovered by a French microbiologist called Louis Pasteur

He produced several vaccines including one for anthrax and one for rabies. Koch is associated with the germ theory of disease.
