Jesus Christ. Really. There is no Pope-like figure of all Baptists. This is because of the teachings of The Bible, such as the Priesthood of all believers and a direct releationship with God the Father through Jesus Christ the Son.

Baptists do not have a central church. Each Baptist church uses the Bible and Jesus Christ as its foundation, and they set their own rules from there. (One of the reasons Baptists and Anabaptists split off of the Catholic church was the growing corruption in the central church- something we still see today.)

Baptist churches are normally congregational and autonomous. The first means that the authority and guidance of the church flows from God through the members of the church. Autonomous means that each local church governs itself.

However, the congregation normal empowers a senior pastor as the chief spiritual leader. Along with this they may empower others in a pastoral staff, deacons, and, in some cases, a board of elders.

Another way of saying this is that a Baptist church is a democracy with the senior pastor being, perhaps, the first among equals... but still among equals.

Each Baptist church has no bishop or hierarchal body telling the church how to conduct its business. Local churches select their pastors and staff and also own their own building.
