All sorts of people invented things during the Middle Ages, but we nearly never know exactly who they were, because the work they did was nearly always anonymous. For the most part, they were people who had skills in their crafts. I will give a few examples.

During the Early Middle Ages, someone invented horse collars. I really enjoy this invention because I cannot imagine it happening for any reason other than someone wanting to make the horse more comfortable; prior to the horse collar, the horse pulled on a rope tied around its neck. The result of the invention was that horses could do more work without tiring, and so there was a huge increase in agricultural output. But who was the inventor? We do not know who, where, or exactly when this happened.

Somewhere in northern Europe of the 11th or 12th century, someone invented the chimney. This was one of the most important inventions in history, I believe, and yet we have no idea of who got the idea. The result was that for the first time in history, people could be cozy in front of a fireplace. Prior to that, open fires were built on hearths in the middles of rooms, and the smoke had to vent out holes at the top of the room. Usually, even a large house only had one fire, and on a cold night, everyone had to gather around it or go without. But who was the inventor? Whoever it was, is lost to history.

We know the artesian well was invented in 1126 by Carthusian monks of Artois, France. If the names of these monks is recorded, I have certainly never seen it.

Eye glasses were invented in Italy in the 13th century. In 1306, monk who had some knowledge of the invention said in a sermon that the invention had happened about 20 years earlier, though he did not say who the inventor was. We do not know if this is true, and we really have no knowledge of who made the invention.

There were a lot of inventions of the Middle Ages, and many of them are very important. There is a link below to a related question dealing with what they were.

When was an important technological invention made in the middle ages?

There were quite a few important inventions in the middle ages. To choose one, my personal favorite is the chimney, which was invented in Northern Europe in the 11th or 12th century, and which made it possible for people to have fireplaces for the first time in history. Of course, I would not belittle the importance of the printing press, which was invented in the Late Middle Ages, as is well known, but the Renaissance also claims the printing press, and the fireplace is purely medieval. There is a link below to a related question whose answer lists other important medieval inventions and provides a rather simplistic comparison of the creativity of the Middle Ages with that of the Renaissance.
