The Chinese have crushed peanuts into creamy sauces and used them as thickeners for centuries. Civil War soldiers ate peanut porridge. In 1890 George A. Bayle Jr., processed and packaged ground peanut paste as a nutritious protein substitute for people with poor teeth who couldn't chew meat. Dr. John Harvey Kellogg in Battle Creek, Michigan, worked on a peanut paste at about the same time as Bayle but his product was not as tasty since it was boiled not roasted. In 1903, Dr. George Washington Carver started peanut research at Tuskeegee Institute in Alabama. Since peanut butter had already been developed by then, Dr. Carver developed more than 300 other uses for peanuts and improved peanut horticulture. He is considered to be the father of the peanut industry.
