Who makes cooper sharp cheese?

Dad used to be a foreman at one of the Cooper aging factories in Phila, PA. Back in the 50's & 60's, Cooper and Clearfield cheese was produced in Clearfield, PA and aged at various warehouses throughout PA. Don't know how they do it now, but when I was a child (brmflchten years ago), I often went down to his work and watched the different stages in the process. 25# wheels were aged over a long period, and one of Dad's jobs was to periodically take a core sample and taste it for quality.
We ALWAYS had a "cub" wheel (5#) at the house for sandwiching or snacking.
All cheese is made by curdling milk, straining out the curds, pressing them into a form. Different types of cheese are made different by using various curdling agents, different types of milk, aging the cheese for various lengths of time, etc. Sharp cheeses are usually aged longer than mild cheeses.
I contacted Schreiber Foods, Inc., the company that makes Cooper Sharp cheese. The following is the response I received: We do not intentionally add gluten to our products.
