It should be noted that to the Greeks, while they represented their gods living on Olympus (or under the sea), they also believed them to be omnipresent, meaning they were at all places at all times. This is how the gods would know when you cursed them or did some sort of dishonor to them.

In the defining of the Five Ages, it is said that in the final age, the Iron Age, that men would become to impious as to stop worshiping the gods altogether and that they would abandon man. Zeus alone stayed behind, waiting for the time that he would destroy this race of men like he had all the others before it.

Poseidon was not "last seen" with anyone. He wasn't real. The stories about him were not dated. The people that believed in him believed him to be omnipresent, much like you probably view your god to be.
