The helots were serfs, that is they were bound to the land, and obliged to give a portion of the produce to the owner of the land - to the city of Sparta which had taken over the land. Therefore they lived on their farms and could not leave them.
Technically (and very obviously) he did want Xerxes dead because he was a benevolent tyrant but Leonides words were (loosely), "By the end of this war. I want everyone to know that even a God-King can bleed." And they punctuated the end result of those words when Xerxes held his hand to his mouth with tears in his eyes and was in shock because he could in fact bleed thus proving, he was not a God. Which Leonides knew he could not actually kill the entire armada Xerxes held let alone the small shot of being able to kill Xerxes himself, so therefore. The ACTUAL 300 was just a sort of inspirational message to others' (peoples he had conquered or who were endangered of him doing so) not to give in to this self-proclaimed God.
